Nestled east of El Cajon, California, within a 63-acre wildlife preserve, Perduret embodies the delicate balance between craftsmanship and sustainability. After years of experimentation with natural ingredients, Michael Pearson discovered that wildflower honey—harvested from the thriving ecosystem surrounding the preserve—was the key to creating a sparkling wine unlike any other.
